Maynard James Keenan, the renowned winemaker and vocalist for Tool, A Perfect Circle, and Puscifer, fulfilled his promise by opening Four 8 Fried Chicken in Old Town Cottonwood, following the success of his Four Eight tasting room established in December 2022. The ribbon-cutting ceremony for the fried chicken restaurant occurred on March 14 at 11 a.m., marking the official launch of this exciting new venture. Housed in the former location of the Merkin Vineyards Tasting Room and Osteria, which relocated to the Hilltop campus, Four 8 Fried Chicken offers a menu inspired by Keenan’s family recipes and crafted in collaboration with chef Monty Frost. The menu is designed to complement the array of sparkling Arizona meads, ciders, and wines available.
Featuring a southwestern twist on hot chicken, Four 8 Fried Chicken offers an enticing selection of side dishes, including Keenan’s father’s green beans and bacon, potato salad, hushpuppies, green chile cheesy shells, jalapeno cornbread, and fennel slaw. Additionally, guests can indulge in delicious desserts such as waffles, house-made gelato, and seasonal bread puddings. While awaiting their made-to-order chicken, patrons can sample a variety of Arizona wines, meads, and ciders, enhancing their dining experience with locally sourced beverages. Operating hours are from 11 a.m. to 8 p.m. on Sundays through Thursdays, and from 11 a.m. to 9 p.m. on Fridays and Saturdays. Cinco de Mayo at Tlaquepaque Arts & Shopping Village
